    Lavash Chicken Gyro Cups

    These lavash chicken gyro cups are big on flavor and texture due to crispy lavash cups, well-seasoned chicken, fresh cucumber tomato relish and tangy tzatziki sauce.

    These lavash chicken gyro cups are such a fun and tasty appetizer, dinner or snacking option! And they're big on flavor and texture too, thanks to the crispy lavash cups, the Gyro-seasoned chicken, fresh cucumber and tomato relish, and tangy tzatziki.

    To make, simply mold store-bought lavash into "cups" with a muffin pan, then stuff the cups with well-seasoned, garlicky rotisserie chicken and a homemade cucumber and tomato relish. Then, top with a spoonful of store-bought tzatziki or hummus and freshly chopped parsley. Easy and delicious!

    For the lavash bread, we recommend Joseph's Bakery Lavash Bread, which is low in carbs and made with quality ingredients. But you can use another lavash bread of choice.

    These chicken gyro cups are ideal any time of year (but especially summer due to fresh tomatoes and cucumber) and can be made quickly or prepped in advance of company. We hope you enjoy them!

    What are Gyros?

    Gyros are a popular Greek dish made with meat (chicken, lamb, pork or beef), which is seasoned with various Mediterranean-spices and garlic. The meat is typically made on a spit or a vertical rotisserie, which continuously rotates and roasts the meat until tender. The meat is sliced and served in a pita along with other ingredients like chopped tomatoes, onions, and tzatziki sauce.

    Ingredients & Substitutions

    Lavash bread: We use Joseph's lavash bread since it's low in carbs and uses quality ingredients. If you use another lavash bread, then you'll need to reevaluate the nutritional information.

    Store-bought rotisserie chicken: To keep the gyro cups easy, we simply use store-bought rotisserie chicken, which we shred into chunks and combine with garlic and Italian seasoning. We recommend buying a rotisserie chicken that is organic, free-range, and free of hormone.

    Cucumbers: We recommend using an English or Persian cucumber, but you could also use a fresh garden cucumber too.

    Grape tomatoes: We love grape tomatoes in the relish, but you could also use cherry tomatoes, Roma tomatoes or whatever fresh tomatoes you have on hand.

    Lemon: Lemon is a must for the cucumber and tomato relish and squeezing over the chicken.

    Garlic: Garlic is used to flavor the rotisserie chicken. You could also add to cucumber tomato relish if you like.

    Italian seasoning: To keep things simple, we simply season the rotisserie chicken with Italian seasoning. Or you could use a combination rosemary and oregano.

    Tzatziki and/or hummus: To keep things simple, we use store-bought tzatziki and hummus, which we get from Trader Joe's. Tzatziki is lower in carbs and hummus is typically a few carbs per two tablespoons. Or you can use a homemade tzatziki or hummus if you prefer.

    Step-by-Step Instructions

    STEP 1: Pre-heat oven to 350 degrees F. Brush 1 tablespoon of olive oil on lavash bread. Fold lavash in half, lengthwise. Unfold lavash and use a pizza cutter or knife to cut lavash in half at folding point. Then, cut each half into 4 similar-size pieces, for a total of 8 lavash pieces. Center each lavash piece over the middle of each muffin well and lightly press into muffin well until it holds in a cup form. Lightly sprinkle each lavash cup with kosher or garlic salt. Bake in the oven for 4 or 5 minutes until lightly crisp and golden. Check on them often as they can quickly burn.

    STEP 2: In a small bowl, combine ½ tablespoon olive oil, 1 teaspoon lemon juice, chopped cucumber and tomatoes. Season with salt and pepper to taste.

    STEP 3: In a large skillet over medium heat, heat olive oil and stir in minced garlic and cook for 30 seconds before adding Italian seasoning and shredded rotisserie chicken. Stir until well combined and chicken is warmed. Remove from heat and season with salt and pepper to taste. Lightly squeeze fresh lemon juice over the top.

    STEP 4: After lavash cups have cooled, spoon chicken mixture into cups until half full. After, fill cups with the cucumber tomato relish. Spoon a dollop of tzatziki or hummus on top. Sprinkle with freshly chopped parsley as desired. Serve immediately.

    Prep Ahead

    You can make the baked lavash cups and the cucumber tomato relish up to a day in advance of serving. Simply store the relish in a covered container in the fridge until you're ready to use. Since baked lavash cups are somewhat delicate, be sure to store carefully in a covered container at room temperature.

    Ingredients
      

    For preparing lavash cups

    • 1 Joseph's Flax, Oat Bran & Whole Wheat Lavash
    • 1 tablespoon extra-virgin olive oil
    • Salt to season

    For cucumber tomato relish

    • ½ cup English or Persian cucumber, quartered lengthwise and diced
    • ½ cup grape tomatoes, quartered or halved, depending on size
    • ½ tablespoon extra-virgin olive oil
    • 1 teaspoon lemon juice
    • Salt and pepper to season

    For chicken

    • 1 ½ tablespoons extra-virgin olive olive
    • 3 cloves garlic, minced
    • 2 teaspoons Italian seasoning
    • 1 cup rotisserie chicken, shredded into smaller chunks
    • Salt and pepper to season

    To finish (optional)

    • 4 tablespoons tzatziki or hummus (for ½ tablespoon dollop on top of each cup) - optional
    • 2 tablespoons fresh parsley, chopped - optional

    Instructions
