With rotisserie chicken and Joseph's Lavash Bread, you can make a killer buffalo chicken flatbread that's low in carbs and done in 15 minutes!

If you got leftover rotisserie chicken along with Joseph's Flax Lavash Bread (which is low in carbs and can be found at some large grocers), then you've got to try this tasty buffalo chicken flatbread pizza! It's a perfect lunch or weeknight dinner since it only takes 15 minutes to make and is a crowd pleaser.
This recipe is adapted from my son's cookbook, The Complete Baking Book for Young Chefs. We love buffalo chicken, so this recipe seemed like a no-brainer to make. And we're so glad we did as now we have another quick weeknight meal we can add to our rotation.
The mix of toasted lavash with melted Monterey Jack cheese and chunks of spicy buffalo chicken is such a delicious combination. And we think it's even better when lightly drizzled with ranch dressing (or blue cheese if you prefer).
Joseph's Flax, Oat Bran & Whole Wheat Lavash is low in carbs at 6 grams of net carbs per ½ sheet of lavash. Additionally, it's higher in protein for a lavash bread since it contains 6 grams of protein per serving. We buy it at Safeway, but it's also available at Walmart and Albertsons. It's great for making any type of low-carb flatbread or this breakfast lavash with smoked salmon.
Ingredients

Joseph's Flax, Oat Bran & Whole Wheat Lavash is a lower-in-carb lavash that is 6 grams net carbs per ½ sheet of lavash. Additionally, it's higher in protein at 6 grams per serving. You can get at Safeway, Walmart, Albertsons or Amazon.
Store-bought rotisserie chicken: Shredded rotisserie chicken is perfect for this recipe since it's tender, shreds easily and takes just a few minutes to prepare. We recommend buying a rotisserie chicken that is organic, free-range and free of hormone. Also, check the ingredients to be sure that no sugar is added and only simple seasonings are used.
Frank's Hot Sauce: Frank's hot sauce is typically used in most buffalo sauces, but you can use another hot sauce of choice.
Butter: Butter and hot sauce are the base of buffalo sauce!
Worcestershire sauce: Worcestershire sauce enhances flavor to the buffalo sauce and adds less than a net carb, so we think it's worth it.
Garlic powder: Just a little garlic powder is used to round out the buffalo sauce!
Monterey Jack cheese: We love Monterey Jack in this flatbread, but you could also consider shredded mozzarella.
Green onion: We love the flavor that chopped green onions add to the flatbread pizza. Definitely worth it!
Ranch Dressing or Blue Cheese (optional): We prefer a drizzle of ranch dressing over the flatbread when done, although it's optional. Another option is to add blue cheese crumbles or a drizzle of blue cheese dressing — up to you!
How to Make
STEP 1: Pre-heat oven to 400 degrees F. When done, add one Joseph's lavash and toast for two to three minutes until lightly toasted. Remove and place on sheet pan of tinfoil and let cool.
STEP 2: In large bowl, combine melted butter, hot sauce, Worcestershire sauce and garlic powder. Stir until well combined.


STEP 3: Add chopped rotisserie chicken to buffalo sauce and toss until well coated.
STEP 4: Evenly spread buffalo chicken mixture over the top of the toasted lavash.


STEP 5: Sprinkle shredded Monterey Jack cheese over the top of the buffalo chicken. (If you like, you can also add some crumbled blue cheese as well). Heat in the oven until cheese is melted and chicken is warmed, about three or four minutes. Just be sure not to burn the lavash edges (been there, done that!).
STEP 6: Remove flatbread from oven and top with chopped green onion. Lightly drizzle with ranch dressing (or blue cheese dressing) if desired.

Buffalo Chicken Lavash Flatbread (Low Carb)
Ingredients
- 1 Joseph's Flax, Oat Bran & Whole Wheat Lavash
- 2 tablespoons butter, melted
- 4 tablespoons Frank's hot sauce (depending on preferred spice level; add even more for a spicier sauce)
- ½ teaspoon Worcestershire sauce
- ½ teaspoon garlic powder
- 1 heaping cup rotisserie chicken, chopped into small chunks
- ¾ cup Monterey Jack cheese, shredded
- ¼ cup green onion, chopped
- 2 to 3 tablespoons ranch dressing (or blue dressing or blue cheese crumbles) (optional)
Instructions
- Toast lavash: Pre-heat oven to 400 degrees F. When done, add one Joseph's lavash and toast for two to three minutes until lightly toasted. Remove and place on sheet pan of tinfoil and let cool.
- Make buffalo chicken spread: In a large bowl, combine melted butter, hot sauce, Worcestershire sauce and garlic powder. Stir until well combined. Add chopped rotisserie chicken to buffalo sauce and toss until well coated.
- Make flatbread: Evenly spread buffalo chicken mixture over the top of the toasted lavash. Sprinkle shredded Monterey Jack cheese over the top of the buffalo chicken. (If you like, you can also add some crumbled blue cheese as well).
