Who We Are
Welcome and thank you for visiting our site! We are Cathy and Ishan, the creators of Low Carb Simplified. We are a married couple who live in Washington state with two young, energetic kids.
We created this blog to inspire and support busy individuals to succeed at maintaining a healthy, low-carbohydrate lifestyle through delicious and simple recipes.
Several years ago, we had to cut our carb intake to reduce higher than normal blood sugars and improve our overall health. In the beginning, we really struggled to create tasty and healthy low-carb dishes that weren’t time intensive. Since we were unaware of many low-carb products in the market, we spent a lot of time making stuff from scratch, such as bread, sauces, or desserts. And with two younger kids and hectic schedules, it became too stressful.
To make it work, we decided to simplify our preparation around meals and snacks. So, we began reducing the number of ingredients and using quality low-carb products in recipes to reduce our time spent in the kitchen. To eat healthier, we made sure our meals included low-carb veggies, lean meats, healthy fats, minimally processed foods, and fish and seafood. Lastly, since it’s just as important to create delicious dishes that you love, we began scouring cookbooks and the internet for popular recipes that could be adapted to healthy low-carb recipes and didn’t sacrifice flavor.
We now love the low-carb and keto meals we make at home -- not only because they're tasty and nutritious, but because they're quick and simple to make. This is really important since we'll be living a low-carb lifestyle for the rest of our lives. Additionally, for us, we find that it's important to get creative with low-carb and keto recipes just to keep things interesting. If we don't, we simply get bored of the same old, same old.
And after three years on a keto and low-carb diet, we're happy to report that we're the healthiest we've been in a while. There is no going back!
Our blog features healthy low-carb recipes, which are all 8 ingredients or less. Recipes range in time from as little as 10 minutes to 30 minutes or more. These recipes may not be fancy, but they sure are delicious (in our humble opinion). We hope these help you in your quest to eat healthier!
