This Garlic Cheesy Lavash Bread is crispy, garlicky, and lightly cheesy with a tasty crunch. It's especially delicious dipped in warm marinara sauce and is a great way to satisfy garlic bread cravings without all the carbs. Plus, you get a good amount of protein!
The secret to this bread is baking the lavash until it's crisp before adding the garlic butter, Parmesan, and mozzarella.
We like using Joseph's Flax, Oat Bran & Whole Wheat Lavash because it's low in carbs and higher in protein. Each ½ sheet has just 6 grams of net carbs and 6 grams of protein. You can find it at many grocery stores or online, but any lavash bread will work.

Ingredient Information
Lavash Bread: We like using Joseph's Flax, Oat Bran & Whole Wheat Lavash because it's low in carbs and higher in protein, but any lavash bread will work. If using a different brand (note the nutrition will be different, especially the carbs and protein), baking times may vary slightly.
Garlic butter: A mixture of melted butter, olive oil, fresh garlic, garlic powder, and Italian seasoning gives this bread its rich garlic flavor. You can substitute dried Italian herbs or add a pinch of oregano or basil if that's what you have on hand.
Mozzarella: Shredded low-moisture mozzarella melts really well and gives the bread a gooey center. Fresh mozzarella isn't recommended since it contains too much moisture.
Parmesan: Grated Parmesan adds a salty, nutty flavor. Freshly grated Parmesan works best
Preparation Steps
STEP 1: Preheat the oven to 400°F. In a small bowl, stir together the melted butter, olive oil, minced garlic, garlic powder, Italian seasoning, and a couple of pinches of salt.
STEP 2: Place the lavash directly on the oven rack and brush the garlic butter evenly over the entire surface. Bake for about 2 minutes, or until it's lightly golden and just starting to crisp. (All ovens vary, so keep a close eye on it.)
STEP 3: Carefully remove the lavash from the oven and cut it in half widthwise. Sprinkle the mozzarella and Parmesan evenly over one half.
STEP 4: Return the cheesy half to the oven and bake for about 2 minutes, or until the cheese is melted. (Again, all ovens vary, so watch it closely.)
STEP 5: Place the remaining crispy half on top of the melted cheese to make a sandwich. Let it rest for 1 minute, then cut into 6 breadsticks. Serve warm with marinara sauce for dipping.
Expert Tips
- Watch the lavash closely. It crisps up fast, so check it after 1 to 2 minutes to keep it from getting too brown.
- Use low-moisture mozzarella. It melts well without making the lavash soggy.
- Don't skip the first bake. Crisping the lavash before adding the cheese gives these breadsticks their light, crunchy texture.
- Serve right away. They're at their crispiest while still warm from the oven.
