Ingredients
Organic raspberries and blackberries: We recommend buying organic berries since berries are part of the "dirty dozen," which are some of the most pesticide-contaminated foods. We use 5 ounces of each berry. You may change the berry amounts, or even use strawberries and blueberries, but be aware that doing so may alter the nutritional information.
Low-fat cottage cheese: We use a low-fat cottage cheese (2% milkfat) in this salad to keep the protein percentage high. That said, you could also use a full-fat cottage cheese since it only slightly reduces the protein percentage. Whatever you have on hand.
Powdered, sugar-free sweetener: We like to sweeten the whipped cottage cheese with powdered Lakanto monk fruit sweetener (with erythritol). However, you can sweeten with another sweetener of preference. Just be sure to check a sweetener conversion chart.
Lemon juice (optional): We love to add a squeeze or two of lemon juice, about a teaspoon, to the whipped cottage cheese for added brightness.
How to Make
STEP 1: In a food processor, add cottage cheese, sweetener and lemon juice and pulse until smooth.
STEP 2: In a medium to large bowl, add combined berries. Gently fold in whipped cottage cheese mixture until thoroughly combined and berries are fully coated.


STEP 3: Add additional toppings as desired. Serve immediately and store leftovers in the fridge.

Variations
For a low-carb fruit salad, we recommend sticking to berries if you want to change things up. You can easily add strawberries or blueberries, but be aware that doing so will increase the carbs. For added texture and flavor, you can top the salad with chopped almonds, fresh mint, or basil.
How to store
Store leftovers in an airtight container in the refrigerator. It's best to enjoy within 1to 2 days for maximum freshness, as the berries can release moisture and soften over time. Give the salad a gentle stir before serving again, and if needed, you can add a little more monk fruit sweetener or fresh berries to refresh the flavors.
