This protein bowl with cottage cheese, smoked salmon, cucumber, tomatoes and everything bagel seasoning is a fast, easy & nutritious breakfast!
This delicious and savory breakfast bowl is everything but the bagel! That's because it's made with creamy cottage cheese (forget the cream cheese), cold smoked salmon, chopped cucumbers, tomatoes and everything bagel seasoning. It's got the flavor of the classic bagel arrangement, but it's high in protein and lower in calories and carbohydrates.
Cottage cheese is a healthier creamy cheese ingredient since it's rich in protein, relatively low in fat, and high in calcium, and vitamins A and B. And when you add fresh-cut veggies and smoke salmon, you increase the level of protein, fiber, and vitamins C and K.
This nutritious breakfast bowl takes a little more than five minutes to throw together and is easy to prepare. It's a tasty way to change up breakfast routine!
Full-fat (4%), small-curd cottage cheese: We use full-fat (4% milk fat) cottage cheese since a lower-in-fat cottage cheese doesn't increase the protein percentage by much (already high in protein) and we prefer the taste of full-fat cottage cheese. However, you could use a lower-in-fat cottage cheese if you like.
Smoked salmon: We use cold-smoked salmon that is silky in texture (and typically paired with cream cheese and bagels) as opposed to hot smoked salmon that is cooked through. However, you could use whichever you want or have on hand.
English cucumbers: We prefer to use English cucumbers since they have edible skin, tiny seeds and are nice and crunchy.
Grape tomatoes: We love chopped grape or cherry tomatoes in this bowl. If you have ripe, summer tomatoes, those will work as well.
Everything bagel seasoning: For a bagel-like flavor, we love topping with a little everything bagel seasoning, which you can get in the spice section at most grocers and Trader Joe's. It's basically a combination of dried garlic and onion, sesame seeds and poppy seeds. If you don't have on hand, you can add a tiny pinch of each of these seasonings or skip all together.
How to Make
STEP 1: Chop tomatoes, cucumbers, red onion and fresh parsley. Drain tomatoes as needed.
STEP 2: In a medium bowl, spoon in cottage cheese and top with chopped tomatoes, cucumber and smoked salmon. Lightly sprinkle with everything bagel seasoning and serve immediately.

- ½ cup 4% milkfat small curd cottage cheese
- 2 ounces cold smoked salmon
- ⅓ cup grape tomatoes, chopped
- ⅓ cup English cucumber, chopped
- ¼ teaspoon everything bagel seasoning
- Make Bowl: In a medium bowl, spoon in cottage cheese and top with chopped tomatoes, cucumber and smoked salmon. Lightly sprinkle with everything bagel seasoning and serve immediately.
