Catalina Crunch Protein Cereal (Honey Graham): One of our favorite protein cereals with 11 grams of protein per serving. We use the honey graham flavor to get that classic graham cracker taste and crunch.
Lily's sugar-free, semi-sweet baking chips: We use Lily's sugar-free milk chocolate baking chips, but you could also consider Lily's sugar-free dark chocolate or semi-sweet baking chips.
Butter: Although butter decreases the percent of protein, it's critical for creating the right consistency in these treats.
Preparation Steps
Melt the marshmallows: In a large pot over low heat, melt 2 tablespoons butter. Add ChocZero marshmallows and stir continuously. The mixture may start to clump together and form a stiff ball, which is normal. When it becomes too thick to stir easily, add 1 more tablespoon butter and keep stirring until the marshmallows are melted or nearly melted.
Add cereal: Quickly stir in a bull bag of Catalina Crunch Honey Graham Cereal (9 ounces) until well combined. Take off heat and fold in sugar-free chocolate chips until well combined. Press the mixture into a parchment-lined or greased 8x8-inch pan. Flatten it evenly using a silicone spatula.

Let set: Let cool at room temperature for at least 30 minutes before cutting. You can also chill the pan in the fridge to set faster.

Expert Tips
- Use low heat: Melt slowly to keep the marshmallows soft and stretchy instead of grainy.
- Stir continuously: Keep stirring as the marshmallows melt so they stay smooth and don’t burn. The mixture may start to clump together and form a stiff ball — that’s when you add a little more butter to loosen up.
- Work quickly: Once the marshmallows are melted, stir in the cereal right away before the mixture gets too stiff to mix,
- Flatten with a silicone spatula: It prevents sticking and helps you press the bars into an even layer.
How to Store
Store bars in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. If refrigerated, let them sit out for a few minutes before serving so they soften back up.
