    Sheet Pan Asian Chicken and Broccoli is an easy dinner that's high in protein, low in carbs, sugar-free, and packed with a yummy spicy soy flavor!

    This Sheet Pan Asian Chicken and Broccoli is one of those yummy, easy dinners you'll want to make on repeat! The chicken is marinated in a simple mix of soy sauce, sambal oelek, garlic, lime juice, and fish sauce, giving it tons of flavor with a little kick. Add in crunchy broccoli and sweet red bell pepper, and you've got a complete meal the whole family will enjoy.

    It's also a healthier dinner that's high in protein, low in carbs, and free of sugar and sweeteners. Unlike many Asian-inspired recipes, there's no honey, brown sugar, maple syrup, or even sugar-free sweeteners. We think the simple marinade has plenty of flavor to stand on its own.

    Best of all, this recipe is super easy to make. It takes about 10 minutes to prep, 20 minutes to marinate, and 20 minutes to cook. Since everything cooks on one sheet pan, cleanup is quick and easy too!

    Ingredient Notes

    Boneless, skinless chicken thighs: Chicken thighs stay juicy and flavorful in the oven. Leave them whole while baking rather than cutting them into pieces first. This helps prevent them from drying out and keeps them more tender.

    Broccoli florets: Cut the broccoli into bite-sized florets so they cook evenly and are easy to eat. The broccoli soaks up pan juices as it roasts.

    Red bell pepper: Red bell pepper adds natural sweetness and color. Cut it into 1-inch pieces. You can use any color bell pepper you like.

    Sambal oelek: We love using sambal because it's sugar-free and adds heat and flavor. This recipe is mildly spicy, so feel free to add more if you like things hotter or less if you're sensitive to it.

    Low-Sodium Soy Sauce: We use low-sodium soy sauce to control the saltiness. You can substitute with coconut aminos or tamari (gluten free).

    Lime juice: Don't skip the lime juice. It helps tenderize the chicken and adds brightness to marinade.

    Fish sauce: Fish sauce is a must in this recipe. It adds umami flavor and depth without making it taste fishy.

    Garlic: Freshly minced garlic works best here and pairs well with the soy sauce, sambal, and lime.

    Preparation Steps

    STEP 1: Preheat oven to 400 degrees F. In a large bowl, whisk together oil, sambal, soy sauce, lime juice, fish sauce, and garlic. Add the chicken thighs and toss to coat. Cover and marinate in the refrigerator for 20 to 30 minutes.

    STEP 2: While chicken marinates, chop broccoli and bell pepper and toss with 1 tablespoon oil. Lightly season with salt.

    STEP 3: Remove chicken from the marinade and place it on one side of a large sheet pan. Add the broccoli and bell pepper to the bowl with the remaining marinade and toss until coated. Spread the vegetables on the other side of the sheet pan. Season everything lightly with black pepper.

    STEP 4: Bake for 10 minutes. Remove the sheet pan from the oven. Flip the vegetables and spoon or brush some of the pan juices over the chicken. Return the pan to the oven and bake for 8 minutes more. Remove the pan from the oven and spoon or brush more of the pan juices over the chicken and vegetables. Turn the oven to broil and broil for 1 to 3 minutes, or until the chicken is lightly browned and the vegetables have a few charred edges.

    STEP 5: Remove from oven and let the chicken rest for 5 minutes. Slice the chicken and serve with the broccoli and bell pepper.

    EXPERT TIPS

    • For the best flavor, marinate the chicken for 20 to 30 minutes before cooking. You can marinate the chicken for up to 4 hours if you'd like to prep ahead. Since the marinade contains lime juice, we don't recommend marinating longer than 4 hours. The acid can start to break down the chicken too much and affect the texture.
    • No additional salt is needed since the soy sauce and fish sauce provide plenty of seasoning.
    • For extra heat, add more sambal oelek to the marinade or serve additional sambal on the side.

    HOW TO STORE

    Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or in a skillet over medium heat until warmed through.

    For the best texture, we don't recommend freezing this recipe since the broccoli can become soft after thawing.

    • 2 tablespoons low-sodium soy sauce
