    Sausage and Veggie Sheet Pan with Feta (Low Carb & Keto)

    We're all about keeping dinners simple -- so, of course, this keto sausage and veggie sheet pan is in regular rotation at our house! It bursts with a whole lot of flavor due to the spicy smoked sausage, sweet roasted bell pepper and red onion slices, charred broccoli, and creamy, crumbled feta. It's so yummy! Prep time is less than 10 minutes and bake time is 20 minutes or less. Oh, and just one pan to clean up!

    We use our favorite low-carb smoked sausage, Aidell's Cajun Style Andouille, to give this sheet pan some spice and heat. When the sausages roast, they release their yummy juices, which enhances the flavor of the roasted veggies.

    We load up this sheet pan with our favorite veggies -- bell pepper, broccoli and red onion -- which work well together. But, you could use other veggies if you prefer. In fact, it's fun to play around with different veggies and sausage flavors, as long as you're mindful of the carbs.

    Ingredients

    There are 7 ingredients in this simple sheet pan: extra-virgin olive oil, Aidell's Cajun Style Andouille, broccoli, red onion, bell pepper, feta, and salt and pepper.

    We recommend using Aidell's smoked sausages since they are one of the lowest carb sausages out there and are made with all natural ingredients. We like the spice in the Cajun-Style Andouille, but you could consider another flavor like Italian.

    For this recipe, we use a medium head of broccoli, one red bell pepper, and about ⅛ of a red onion. We top the sheet pan with a quarter cup of crumbled feta when it's done roasting.

    Making the Sausage Sheet Pan

    As with most sheet pan recipes, this sausage and veggie sheet pan is quick and easy to make (that's why we love them, right?!).

    To make this sheet pan, you'll start by slicing up the veggies. You'll slice the red bell pepper into 2-inch long strips and the broccoli into similar-size florets that are small to medium in size. After you'll cut a small wedge from the onion that's about an inch thick. Separate the onion into pieces and weigh.

    After you got all the veggies sliced, then you'll place them on a greased baking sheet and drizzle with a tablespoon of olive oil. You'll mix them all together with your hands until the veggies are well coated. Then, season the veggies with salt and pepper.

    After, you'll cut the Aidell's sausages (3 of them) into 1-inch slices. We do thicker slices since they cook up quick. You'll place the sliced sausages on the pan with the veggies and spread them about so there is some space between them all.

    You'll then put in a 400 degree oven and roast for 15 to 20 minutes (it typically is done in 17 minutes for us), flipping the veggies and sausages half way through. After it's done, remove the pan from the oven and sprinkle crumbled feta over the top of the veggies and sausage. Then, it's time to dig in!

    Alternative Ingredients

    Of course you can change up the ingredient in this low-carb and keto sheet pan! You could consider other veggies like asparagus, grape tomatoes, zucchini, and cabbage. When you experiment with different low-carb veggies, just be sure to check the roasting time and carbs.

    If you're looking for a less spicy sausage, you could consider Aidell's Italian Style Sausage or even Aidell's Artichoke and Garlic Smoked Sausage. Whatever you choose, don't forget to check the carbs since the carbs differ for each type of sausage.

    Ingredients
      

    • 3 Aidell's Cajun Style Andouille Sausage sliced into 1-inch pieces
    • 1 ounce red onion sliced into ½-inch wide slices
    • 3 ounces red bell pepper sliced in 2-inch long strips
    • 4 ounces broccoli cut into similar size florets
    • ¼ cup crumbled feta
    • 1 tablespoon extra-virgin olive oil
    • Salt and pepper to season

    Instructions
     

    • Get started. Pre-heat oven to 400 degrees. Grease a rimmed baking sheet with olive or avocado oil. Cut veggies and sausage as indicated. Place veggies on rimmed baking sheet and drizzle with a tablespoon of olive oil. Mix veggies and oil with hands until veggies are lightly covered in oil. Season with salt and pepper. Add sliced sausages to pan and disperse veggies and sausage so there is some space between them.
    • Bake and finish: Place pan in oven and let roast for 15 to 20 minutes (it takes us 17 minutes), flipping the sausages and veggies after 10 minutes (midway point). When done, remove pan from oven and sprinkle crumbled feta over the top of veggies and sausage. Plate and serve.
