    This Chicken Sausage, Squash, and Broccoli Sheet Pan is a cozy fall harvest meal that's packed with protein and fiber, full of flavor, low in carbs and so easy to make!

    Fall flavors all on one sheet pan? Yes, please! Sweet delicata squash and crunchy broccoli roast up with spicy Andouille chicken sausage and a sprinkle of creamy feta. It's a little sweet, salty, spicy and deliciously creamy.

    It’s healthy and filling too. You get protein from the sausage and feta and fiber from the veggies. Plus, it's low in carbs, gluten-free and keto friendly.

    It's such an easy sheet pan to prepare. Just do a little chopping, toss it all on a sheet pan, and let the oven do the work. In about 35 minutes you have a comforting and simple weeknight meal that everyone will love.

    Ingredient Notes

    Amylu Andouille Chicken Sausage: We love Amylu sausages because they're low-carb and made with quality ingredients. These are pre-cooked, which makes life easy. You can swap in another brand if you like.

    Delicata Squash: Sweet and tender with that perfect fall vibe. Roasts up soft but still holds its shape. You can also use peeled and cubed butternut squash instead.

    Broccoli: Adds a nice, tasty crunch and a boost of fiber. You could also swap in halved and trimmed Brussels sprouts.

    Red Onion: Brings a little bite and sweetness that caramelizes in the oven. You can use any onion that you have on hand though.

    Feta Cheese: We use reduced-fat crumbled feta which we sprinkle on at the end. You can also swap for grated Parmesan if you like.

    Garlic Powder: Adds a savory, garlicky boost. Sprinkle on before roasting along with salt and pepper.

    Lemon Juice: A must! A squeeze of fresh lemon at the end brightens the whole dish and brings all the flavors together.

    Preparation Steps

    Start sheet pan: Preheat oven to 400°F. Slice veggies as indicated. Toss veggies on the sheet pan with olive oil, garlic powder, salt, and pepper until evenly coated. Roast the veggies for about 10 minutes.

    Add sausages: Flip the veggies and add Amylu Andouille chicken sausages to the pan. Roast for roughly another 15 minutes, until the veggies are tender and slightly browned and the sausage is heated through.

    Finish: Add the feta in the last 2 minutes of roasting so it warms slightly but keeps its shape. Squeeze fresh lemon juice over the top to brighten flavors (1 to 2 tablespoons). Serve immediately.

    Sheet Pan Tips

    • Cut veggies evenly so everything cooks at the same rate.
    • Don’t overcrowd the pan – give the veggies and sausage space to roast, not steam.
    • Toss halfway through for even caramelization.
    • Add feta at the end so it warms but doesn’t melt completely.

    Storing leftovers

    Let the sheet pan cool, then store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave and sprinkle a little fresh feta on top if you like.

    Ingredients
      

    • 2 cups Delicata squash; scrubbed, ends trimmed, sliced in half (lengthwise), seeds removed, and cut into ½-inch wide slices (to look like ½ moons).
    • 2 cups broccoli, cut into similar size florets
    • ½ cup red onion, sliced into ½-inch wide slices
    • ½ teaspoon garlic powder
    • 1 tablespoon extra-virgin olive oil
    • Salt and pepper to season
    • 3 Amylu Andouille Chicken Sausages (or another brand; add more if desired) , left whole
    • ⅓ cup crumbled reduced-fat feta
    • Several squeezes lemon juice (1-2 tablespoons)

    Instructions
