Yes, it's possible to make a yummy chicken quesadilla with just a microwave, and this microwave barbeque chicken quesadilla is our favorite!

Yes, we know. Everyone loves skillet quesadillas which produce seared, crispy tortillas.
BUT, microwave quesadillas can be pretty darn tasty, too. Not only that, they're ideal when you only have access to a microwave (hello workplace kitchen, dorm or hotel room). Or, maybe you just don't want to bother with a stovetop and pan. We all have our days.
This microwave barbeque chicken quesadilla is our favorite microwave quesadilla. It checks so many boxes: it's hearty, cheesy, sweet, spicy, and quick and easy to make.
The barbeque sauce gives the chicken a kick of flavor and keeps it moist and tender, which is key to a yummy chicken quesadilla!
Ingredients
Just 6 ingredients in this microwave quesadilla!

Low-carb tortilla: There are a lot of low-carb tortillas on the market now and some are pretty decent. Most have between 4 to 6 net carbs per tortilla. If you don't have a favorite yet, check out our low-carb tortilla review here.
Shredded cheese: We use Mexican-style shredded cheese since it uses a combination of cheeses like cheddar and Monterey jack. However, you could also use cheddar or mozzarella shredded cheese.
Barbeque sauce: To keep the carbs low, we use a sugar-free barbeque sauce. We use G Hughes Sugar-Free Original Barbeque Sauce. Another good one is Sweet Baby Ray's No Sugar Added Original Barbecue Sauce.
Sliced red onion: If you've ever had a barbeque chicken pizza, you know that sliced red onions are important in the overall flavor!
Jalapeño peppers: We simply use the deli-sliced jalapeño peppers that you can buy in the condiment aisle. Although peppers are optional, they make a delicious spicy-sweet combination.

How to Make
Step 1: Heat the tortillas in the microwave on a plate with a paper towel for 1 minute. Remove and let cool. This step helps dry out the tortillas.
Step 2: In a small bowl, combine shredded chicken with barbeque sauce, diced onion and jalapeño. Cover with a damp paper towel and heat in the microwave for 1 minute, until chicken is warm.


Step 3: Spread the barbeque chicken mixture in even layer on top of one of the quesadillas.
Step 4: Sprinkle the shredded cheese evenly over the top of the barbeque mixture.


Step 5: Place the other tortilla over the top. Microwave for 1 minute, until cheese is melted. Slice and serve.

- ⅓ cup rotisserie chicken, shredded
- ⅛ cup red onion, diced (approximately 0.4 oz)
- 1 tablespoon jalapeño pepper, diced (approximately 0.3 oz)
- 3 tabelspoons G Hughes Sugar-Free Original BBQ Sauce or other sugar-free BBQ sauce
- 2 Mission Fajita Size (8") Carb Balance Whole Wheat Tortillas or other low-carb tortillas
- ⅓ cup Mexican-style shredded cheese
Instructions
- Prepare the tortillas: Heat the tortillas in the microwave on a plate with a paper towel for 1 minute. Remove and let cool (this helps dry out the tortillas).
- Make the stuffing: In a small bowl, combine shredded chicken with barbeque sauce, diced onion and jalapeño. Cover with a damp paper towel and heat in the microwave for 1 minute, until chicken is warm.
- Finish and heat: Spread the barbeque chicken mixture in even layer on top of one of the quesadillas. Sprinkle the shredded cheese over the top of the barbeque mixture. Place the other tortilla over the top. Microwave for 1 minute, until cheese is melted. Slice and serve.
