Sugar-free pudding isn't just for making pudding! Of course, pudding is a great dessert in and of itself. But, sugar-free pudding can be used in a number of other ways. Often times, it can be used as a short-cut ingredient in desserts or other recipes.
More recently, sugar-free puddings have been used in sugar-free ice creams made in the Ninja Creami. The instant pudding not only flavors the ice cream, but also works as a stabilizer and an emulsifier in the ice cream.

Is Sugar-Free Pudding Keto?
It depends on the brand, how much is consumed and whether you follow a strict keto diet or not. The two most popular brands of sugar-free pudding are Simply Delish and Jell-O. As a prepared pudding, Simply Delish is 4 net carbs per serving and Jell-O is 8 net carbs per serving. The first ingredient in both puddings is starch, which makes them higher in carbs (and is not entirely keto-friendly ingredient).
If you follow a strict keto diet, then sugar-free Jell-O pudding may not be suitable due to its higher net carbs and unfavorable ingredients (see below). However, Simply Delish has better quality ingredients than Jell-O and is lower in net carbs. Because of that, Simply Delish sugar-free pudding is okay if you're eating in moderation and not on a strict keto diet.
