    Juicy, ripe strawberries stuffed with a creamy, high-protein chocolate mousse for a quick, low-carb treat that takes less than 15 minutes to make!

    Looking for an easy, healthy treat that satisfies your sweet tooth and packs in the protein? These chocolate cottage cheese mousse stuffed strawberries are low in carbs, full of flavor, and super simple to make!

    Ripe, juicy strawberries get filled with a rich, creamy chocolate mousse that’s light, airy, and made with just a few simple ingredients like cottage cheese and sugar-free chocolate.

    The high-protein chocolate mousse is easy to whip up and something we make often. Just blend cottage cheese with melted sugar-free chocolate chips, then fold in sugar-free whipped cream until fluffy. Scoop out the strawberry centers and fill with the mousse. Note that bigger strawberries work best since they’re easier to stuff.

    This quick treat comes together in under 15 minutes and stores well in the fridge. It’s the perfect summer snack or dessert!

    Key Ingredients

    Fresh, organic strawberries: It's important to buy organic strawberries since they're part of the "dirty dozen," which are some of the most pesticide-contaminated foods. Large or medium-size strawberries work best (easier to scoop out and fill!)

    Low-fat cottage cheese: We use a low-fat cottage cheese (2% milkfat) in this bowl since it slightly increases the protein (over full-fat cottage cheese). However, full-fat cottage cheese works just as well.

    Lily's sugar-free, semi-sweet baking chips: We use Lily's sugar-free semi-sweet chocolate baking chips in this mousse, but you could also consider Lily's sugar-free dark chocolate or milk chocolate baking chips.

    Sugar-free Whipping Cream: To enhance the flavor and make the mousse lighter, we incorporate zero-sugar whipping cream. We simply use store-bought zero-sugar whipping cream since it's tasty and low in carbs.

    How to Prepare

    Blend cottage cheese: In a food processor, pulse cottage cheese until smooth.

    Melt chocolate: In a small bowl, melt the sugar-free chocolate chips in the microwave in 30 second increments until they stir to a smooth consistency (about a minute in total heating time).

    Finish mousse: Add melted chocolate to processor and pulse until thoroughly combined with whipped cottage cheese. Use a spatula to remove cottage cheese mixture from processor and place into a medium-size bowl. Fold in whipping cream with spatula until well combined.

    Prepare strawberries: Slice a thin piece off both the top and bottom of each strawberry so they stand upright. Use a ½ teaspoon to carefully scoop out the centers. Pipe the chocolate mousse into each hollowed-out strawberry. Top with sugar-free chocolate chip (optional).

    Serve: Serve immediately or chill in the fridge shortly before serving.

    Piping Suggestions

    To pipe the mousse into the strawberries, we simply use a small zip-top bag with the corner snipped off. Or, you can you can use a piping bag fitted with a small round or star tip.

    How to Store

    Store the stuffed strawberries in an airtight container in the fridge for up to 2 days. For best texture, keep them chilled until ready to serve.

    • ½  cup 2% milkfat, small-curd cottage cheese
    • 1 ounce (about ¼ cup) Lily's Semi-Sweet Baking Chips
    • ¼ cup sugar-free whipping cream
