Since this is a smaller recipe, we recommend melting the low-carb chocolate chips in the microwave in 30-second increments to avoid burning the chocolate. Once the chocolate is melted, then dip the strawberries and put them in the fridge to set. And that's it, you're done!
The trickiest part is dipping the strawberries. We found that large strawberries are difficult to dip due to weight. However, medium-size strawberries seem to work best. We use toothpicks to dip the strawberries, but you can use whatever method is easiest for you. Our philosophy is that they don’t have to look perfect, they just need to taste delicious!

Sugar-Free, Keto Chocolate Covered Strawberries
Ingredients
- 8 medium-size organic strawberries
- 3 ounces sugar-free, semi-sweet chocolate chips (we use Lily’s Semi-Sweet Chocolate Baking Chips)
- 1 teaspoon coconut oil (we use Trader Joe's Organic Triple Filtered Coconut Oil)
- ¼ cup crushed/chopped peanuts, roasted and salted (optional)
Instructions
- Get started: Wash and dry strawberries. Be sure strawberries are completely dry before dipping. Smash or chop peanuts with chopping knife and place in small bowl (optional). Line a rimmed baking sheet with parchment paper.
- Melt chocolate: In a small bowl, heat chocolate chips and coconut oil in 30-second increments in microwave. After each 30-second increment, take out and stir. Stop this process as soon as chocolate chips stir to a smooth consistency.
- Dip: Insert a toothpick into the top of each strawberry. Dip each strawberry into the chocolate and slightly turn so chocolate wraps around strawberry as you pull up. Then, immediately dip each chocolate covered strawberry into the crushed peanuts (if desired). Place each strawberry on the parchment paper.
- Finish and serve:: To set chocolate, leave strawberries at room temperature for 30 minutes or refrigerate for 15 minutes. Serve after chocolate has set.
