    This high-protein, berry Jell-O salad is a creamy, fruity, sugar-free twist on ambrosia salad, packed with protein and low in carbs. Ready in just 5 minutes!

    This high-protein berry Jell-O salad is a dreamy blend of creamy, fruity goodness that tastes similar to ambrosia salad but with a healthy twist! It’s sugar-free, high in protein, and low in carbs, making it an ideal guilt-free treat.

    To make it high in protein, we start with a base of creamy cottage cheese. Then, we add sugar-free strawberry Jell-O, chopped strawberries, blueberries, sugar-free whipping cream, and sugar-free marshmallows, creating a dish full of fruity flavor and contrasting textures.

    Whether you’re looking for a quick snack, a light dessert, or a refreshing breakfast, this recipe is sure to please. Best of all, it’s ready in just 5 minutes!

    Key Ingredients

    Low-fat (2% milkfat) cottage cheese: We use a low-fat cottage cheese (2% milkfat) since we found little difference in taste between the low- and high-fat cottage cheese when done. However, you can use a higher-in-fat cottage cheese if you like as it only slightly reduces the level of protein.

    Sugar-free strawberry Jell-O powder: Adds a burst of strawberry flavor without the sugar. Feel free to try other sugar-free Jell-O flavors like raspberry or cherry for variety.

    Fresh strawberries: Sweet and juicy, they add natural sweetness. Frozen strawberries can be used, but thaw them first.

    Blueberries: Provide a pop of flavor and variety. You can swap these with raspberries or blackberries.

    Sugar-free Reddi-Wip Whipped Topping: This adds a light and fluffy texture to the salad. Gently folding it in helps to ensure an airy consistency. Homemade whipped cream with a keto-friendly sweetener works too.

    Sugar-free marshmallows (optional): A fun, optional addition for a nostalgic touch. You can leave them out if you prefer a simpler salad. We use Know Brainer Max Mallow Vanilla Marshmallows.

    How to Make

    Step 1 — Blend the base: In a food processor, pulse the cottage cheese with the Jell-O powder and one strawberry until smooth. (Blending with fresh strawberry balances the artificial flavor of the strawberry Jell-O).

    Step 2 — Mix it up: Spoon the cottage cheese mixture into a bowl. Gently fold in the whipped cream, berries and sugar-free marshmallows (optional) until ingredients are well integrated. (Gently folding it in helps to ensure an airy consistency).

    Step 3 — Serve and enjoy: Top with additional chopped strawberries or blueberries if desired. Enjoy immediately for the freshest flavor!

    How to Store

    If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. For best results, gently stir in a fresh squirt of sugar-free whipping cream before serving. While the flavors will remain delicious, the texture may become slightly softer over time as the berries release their juices.
