Protein Tuna Muffins (Easy!)

These easy tuna muffins are savory, cheesy, filling, high in protein and a perfect take-and-go breakfast or snack for busy days!

Ingredients

  • 2 cans canned SafeCatch Tuna
  • 4 large eggs
  • ¼ cup super-fine blanched almond flour 
  • cup parmesan, grated
  • ¼ cup full-fat (4%), small-curd cottage cheese
  • ¼ cup red onions, chopped
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt and pepper, combined
  • 2 tablespoons jalapeno (including seeds), diced
  • 1 ½ tablespoon chives, chopped (optional)

Instructions

  • Get started: Preheat your oven to 350 degree F. Grease a muffin tin or line with muffin cups.
  • Prepare muffins: In a large bowl, combine drained tuna, cottage cheese, almond flour, parmesan cheese, red onion, Dijon mustard, garlic powder, jalapeno, chives, and salt and pepper. Stir until well combined.
  • Fill muffin cups: Use an ice cream scooper or large spoon to spoon the mixture into muffin cups. Fill each cup to about ¾ full. If desired, sprinkle a bit of grated parmesan on the top of each muffin.
  • Bake and serve: Bake for about 20 to 25 minutes until the tops are lightly golden. Allow tuna muffins to cool for several minutes before removing from tin. Top with more chives as desired. Serve immediately or store in fridge.
