    If you love pistachios, this keto Ninja Creami pistachio ice cream is about to become your new favorite treat!

    It’s rich, creamy, and bursting with bold nutty flavor. Instead of using pistachio pudding mix, we amp up the nuttiness with almond extract and raw pistachios for a more natural, intense taste.

    You’d never guess by the flavor, but this ice cream is made with cottage cheese, giving it creamy texture while boosting the protein. To keep it sugar-free without a weird aftertaste, we use a blend of monk fruit extract and allulose, so the ice cream tastes like the real deal.

    Best of all, it’s low in calories and high in protein — perfect for a satisfying, nutty indulgence!

    Ingredients

    Full-fat (4%), small-curd cottage cheese: Cottage cheese is the key ingredient for making a creamy, high-protein ice cream. We use a full-fat (4% milk fat) cottage cheese for a creamier texture.

    Unsweetened vanilla almond milk: To create the right consistency, you need a liquid. We use unsweetened vanilla-flavored almond milk since it's low in carbs and calories. You may substitute with another type of low-carb milk like unsweetened macadamia milk.

    Allulose: Unlike other sugar-free sweeteners, allulose has little to no aftertaste, which is important when using a larger amount of sweetener. Since we are using a higher amount of allulose, we combine it with liquid monk fruit sweeter.

    Almond extract: This adds a nutty flavor similar to pistachio, but just a tiny amount goes a long way.

    Raw pistachios: Use raw pistachios raw for the bright green color and fresh pistachio flavor. We recommend crushing them before you add as a mix-in on the Ninja Creami.

    Liquid monk fruit sweetener: Please note we use a liquid monk fruit sweetener, not powdered or granular. If you don't have, you could replace with another sugar-free liquid sweetener such as liquid Stevia (if you are accustomed to the aftertaste), liquid Splenda, or liquid Truvia. This adds a little more sweetness without adding more allulose, which can cause stomach distress in some people.

    Guar gum: Guar gum is thickening agent that helps create a creamy texture in the ice cream.

    How to Make

    STEP 1: Mix the gums (xanthan and guar) into the cottage cheese to prevent clumping when mixing with liquid ingredients. Combine all the ingredients in a blender and mix until thoroughly blended.

    STEP 2: Pour the blended mixture into a Ninja Creami pint container and place in the freezer. Let freeze for at least 24 hours.

    STEP 3: After freezing, take the lid off the pint container and place in the Ninja Creami outer bowl. Install the Creami paddle into the outer bowl lid, place the lid on the outer bowl and lock into place according to the instructions in the Creami manual. Select the Lite Ice Cream mode, and it will spin for several minutes.

    STEP 4: When it stops spinning, take the container out and assess the consistency of the ice cream. If it's powdery in texture, then you'll need to respin until smooth. If you need to respin, place the outer bowl lid back on and lock it back into the Ninja Creami and push respin.

    STEP 5: Crush the pistachios into little chunks. Create a deep hole in the center of the ice cream pint to the bottom of the container. There might already be a small indent from spinning process but make sure you make it deep enough to get to the bottom of the pint. Pour in the crushed pistachios into the center hole.

    STEP 6: Return the pint to the Ninja Creami and press the mix-in button to incorporate.

    STEP 7: When done spinning, serve immediately. Top with additional crushed pistachios as desired.

    How to Store

    Ice cream made by the Ninja Creami is best when eaten immediately. Since this ice cream is made with heavy cream (which contains a high amount of fat), it stores better than our other ice creams without heavy cream.

    If you have leftovers, simply store in the freezer and serve when desired. You may need to let it thaw slightly for a few minutes but there is no need to respin this ice cream before serving left overs.

    • 1 Ninja Creami (Use the 1x conversion button below if you have the original Creami or Creami Breeze)
    • 1 Ninja Creami Deluxe (Use the 1.5x conversion button below if you have the Creami Deluxe)

    Ingredients
      

    • 1 cup unsweetened, vanilla almond milk
    • ¾ cup cup 4% milkfat, small-curd cottage cheese (we use Good Culture 4% Cottage Cheese)
    • ⅓ cup  allulose
    • scant ¼ teaspoon guar gum
    • scant ¼ teaspoon xanthan gum
    • scant ¼ teaspoon liquid monk fruit sweetener (or adjust amount to taste) (we use NOW Foods Monk Fruit Liquid Sweetener)
    • ⅛ teaspoon almond extract
    • 2 pinches salt
    • ¼ cup (20 grams) pistachios

    Instructions

      Are the nutrition facts for the pint?

        Hi Molly! The recipe makes 3 servings total (at the top of the recipe card), and the nutrition information is per serving. Since a Creami pint is 2 cups, the serving size equals 2/3 cup. We use this serving size to match standard ice cream nutrition labels you'll see in US grocery stores.
