This Ninja Creami, keto rocky road ice cream is for chocolate lovers! It's rich and chocolaty with almonds and sugar-free marshmallows!

Chocolate lovers, this one is for you! This Ninja Creami, keto rocky road ice cream is rich and chocolaty with sugar-free chocolate chips, crunchy almonds and gooey, keto marshmallows.
Unlike our high-protein chocolate ice cream that's made with almond milk, this chocolate ice cream is made with heavy cream and almond milk, which makes it ultra creamy and rich (while keeping carbs and lactose low). The chocolate base also includes unsweetened cocoa powder and allulose sweetener. Very simple, but absolutely delicious.
For the marshmallows, you can either buy these sugar-free marshmallows or you can make homemade, sugar-free marshmallows. Or, you can skip them all together. Either way, you'll love it.
As we usually say, you likely wouldn't even guess this ice cream is sugar-free or keto-friendly when you gobble it down. We think it's that yummy!
Ingredients

Just a few notes on the ingredients:
- Heavy cream: For a rich and creamy chocolate ice cream, we use heavy cream. It makes it taste heavenly! To balance the amount of carbs and calories, we combine it with unsweetened almond milk.
- Unsweetened almond milk: We combine unsweetened almond milk with heavy cream since it's low in carbs and low in calories. You may substitute it with another type of low-carb milk like unsweetened macadamia milk.
- Allulose sweetener: When using heaving cream, you need to use allulose to create the right consistency. Please note: you can not use erythritol based sweeteners (such as Swerve) in the recipe or else the ice cream will have a sandy or grainy texture no matter how many times you re-spin it.
- Unsweetened cocoa powder: You need to add unsweetened cocoa powder for a rich, chocolaty flavor!
- Guar gum: Guar gum is thickening agent that helps create a creamy texture in ice creams and sorbets.
- Xanthan gum: Xanthan gum helps improve the texture and reduces ice crystals. Xanthan gum and guar gum work well together to produce the best texture.
- Slivered, toasted almonds: Rocky road ice cream includes some sort of nut (almonds, pecans, peanuts, walnuts, etc.) and our favorite nut for this ice cream is almonds. We buy our slivered, toasted almonds from Trader Joe's. However, you can use another nut of choice.
- Sugar-free marshmallows: You can either buy these sugar-free marshmallows or you can make homemade, sugar-free marshmallows.
- Sugar-free chocolate chips (optional): Sugar-free dark chocolate or semisweet chocolate takes this ice cream to the next level. Although we list them as optional, they're definitely worth it!
How To Make
STEP 1. Combine all the dry ingredients (allulose, guar gum, xanthan, gum and unsweetened cocoa powder) and whisk until well blended.
STEP 2: Combine all the wet ingredients (almond milk and heavy cream) in a blender and add the blended dry ingredients. Mix briefly to blend the ingredients together.


STEP 3: Pour the blended mixture into a Ninja Creami pint container and place in the freezer. Let freeze for at least 24 hours.
STEP 4: After freezing, take the lid off the pint container and place in the Ninja Creami outer bowl. Install the Creami paddle into the outer bowl lid, place the lid on the outer bowl and lock into place according to the instructions in the Creami manual. Select the Lite Ice Cream mode, and it will spin for several minutes.


STEP 5: When it stops spinning, take the container out and assess the consistency of the ice cream. If it's powdery in texture, then you'll need to respin until smooth. If you need to respin, place the outer bowl lid back on and lock it back into the Ninja creami and push respin.
STEP 6: Chop the marshmallows into little chunks. Combined the chopped marshmallows, slivered almonds and sugar-free chips together. Create a deep hole in the center of the ice cream pint to the bottom of the container. There might already be a small indent from spinning process but make sure you make it deep enough to get to the bottom of the pint. Pour the mix-ins (chopped marshmallows, slivered almonds, and optional sugar free chips) into the center hole.


STEP 7: Return the pint to the Ninja Creami and press the mix-in button to incorporate.
STEP 8: When done spinning, serve immediately. Top with additional chunks of almonds and/or sugar-free chocolate chips.


STORING THE ICE CREAM
Ice cream made by the Ninja Creami is best when eaten immediately. Since this ice cream is made with heavy cream (which contains a high amount of fat), it stores better than our other ice creams without heavy cream.
If you have leftovers, simply store in the freezer and serve when desired. You may need to let it thaw slightly for a few minutes but there is no need to respin this ice cream before serving left overs.

Ingredients
Ice Cream Base Wet Ingredients
- 1 cup Unsweetened Vanilla Almond Milk
- ¾ cup Heavy Whipping Cream
Ice Cream Base Dry Ingredients
- scant ¼ teaspoon Guar Gum
- scant ¼ teaspoon Xanthan gum
- ⅓ cup + 1 tablespoon Allulose
- 2 tablespoons Hershey's Special Dark Cocoa Powder
Mix-ins
- 2 tablespoons toasted, slivered almonds
- 2 tablespoons Sugar-free Mini Marshmallows — we've used Maxmallow Classic Vanilla Zero Sugar Marshmallows or you can follow this recipe
- 2 tablespoons Lily's Semi-Sweet Baking Chips (optional)
Instructions

why are there 34 plus carbs? Is it. the marshmallows ? Thats too many carbs for a Keto recipe IMO
It is only 3.3g of net carbs. The nutrition data listed in our recipe card currently follows the policy of the "Nutrition Facts" panel on products in the U.S., which includes sugar alcohols and fiber in the total carbohydrate count even though they don't count towards the net carbs. To make it easier, we list out the net carbs explicitly but realize it can be confusing since many recipe sites only list the net carbs as their "carbohydrate" value. We are hoping to change our recipe card to reduce this confusion in the future.
