Preparation Steps
Cook the cauliflower rice: Heat ½ tablespoon olive oil in a large skillet over medium heat. Add cauliflower rice and season with ½ teaspoon salt and pepper to season. Cook for 8 to 10 minutes stirring occasionally, until lightly golden. Transfer to a bowl and set aside.
Cook brats and veggies: Add remaining olive oil to the skillet over medium to medium-high heat. Slice brats into coins and cook about 3 minutes, stirring occasionally, just until browned. Add onion and bell pepper and cook for 5 to 6 minutes over medium heat until tender. Stir in garlic and thyme and cook 30 seconds, until fragrant.


Bring together: Return cauliflower rice to the skillet. Stir in Dijon mustard and 1 teaspoon apple cider vinegar. Taste and add another teaspoon vinegar or mustard if you want more brightness. Heat for a minute or two and serve. Taste and season with salt and pepper if desired.
