This chicken artichoke cottage cheese bowl is creamy and savory with bites of tender artichoke hearts, rotisserie chicken, fresh spinach, and a little Parmesan and mozzarella cheese. It has all the flavors of a Mediterranean bowl but is healthy and simple to make.

Low-fat cottage cheese: We use a low-fat cottage cheese (2% milkfat) to keep the protein percentage high in this bowl. That said, you could also use a full-fat cottage cheese since it only slightly reduces the protein percentage

Rotisserie chicken: Using store-bought rotisserie chicken makes this bowl super quick and easy, but you can also cook your own if you’d like.
Fresh spinach: Fresh spinach works best here because it’s more flavorful and less watery than frozen.
Parmesan and mozzarella: A mix of grated Parmesan and shredded mozzarella gives the bowl a rich, cheesy flavor.
Artichoke hearts: Jarred, marinated artichoke hearts add a tangy Mediterranean flavor. You can also use artichokes packed in water. Just be sure to drain and chop them well.
Garlic salt: Garlic salt keeps things quick, but fresh garlic works too if you prefer a stronger flavor.
Preparation Steps
Prep the cottage cheese (optional): For a smoother base, pulse the cottage cheese in a blender or food processor until creamy.
Mix the base: In a microwave-safe bowl, stir together the cottage cheese, garlic powder, salt, pepper, spinach, artichoke hearts, and the Parmesan. Fold in the shredded chicken.


First heat: Microwave for about 1 minute, then stir to help the spinach wilt and everything warm evenly.
Top with cheese: Sprinkle the mozzarella over the top an microwave for 1 more minute, or until the cheese is melted (you may need up to 90 seconds more depending on your microwave). Serve immediately.


Make Ahead + Storage
- You can prep the bowl ahead by mixing everything together except the mozzarella topping. Store covered in the fridge for up to 2 days.
- When ready to eat, microwave as directed, then add the cheese topping and finish heating until melty.
- Leftovers can be stored in the fridge for 1 day and reheated in the microwave, though the spinach is best fresh.
