These sweet, low-carb tortilla cinnamon rolls satisfy cravings for cinnamon rolls in minutes. Plus, they're healthier and higher in protein!

We love cinnamon rolls, but have no patience to make regular, low-carb cinnamon rolls. But with these simple, low-carb tortilla cinnamon rolls, we can get the taste of cinnamon rolls in minutes. Of course, these rolls aren't like gooey Cinnabons, but the flavor is close enough to satisfy the taste buds.
Plus, these low-carb tortilla rolls are much healthier and higher in protein since they're made with low-carb tortillas, cottage cheese, a sugar-free sweetener and cinnamon. Cottage cheese replaces cream cheese as a spread on the tortilla and is also used in the sweet icing that gets drizzled over the top (a must!).
We heat the tortilla cinnamon rolls in an air fryer, but you could also heat in the oven. They're an ideal quick snack or sweet breakfast treat!
Ingredients

Low-carb, taco-size tortillas: The ingredient amounts in this recipe are based on "taco" size tortillas (about 8 inches in diameter). In these rolls, we use Mission Carb Balance Tortillas. But, there are other good options out there. Check out our low-carb tortilla review here.

4% milkfat, small-curd cottage cheese : Tortilla cinnamon rolls often call for cream cheese, but we prefer to use cottage cheese since it's a healthier, high-protein option. We use full-fat, small-curd cottage cheese (4% milkfat), but you could also use low-fat (2% milkfat), which is slightly higher in protein. It's best to buy whatever cottage cheese you prefer.
Sugar-free sweetener: We use two types of sweetener in these rolls, which we highly recommend for best taste.
- Brown: For the inside cinnamon mixture, we use a brown sweetener, which adds a warm molasses flavor. You could use Swerve Brown Sweetener or Lakanto Golden Monk Fruit Sweetener.
- Powdered: For the icing, it's best to use a powdered sweetener for a smoother texture. We use Powdered Monk Fruit Sweetener in these rolls, but you could also use powdered Swerve or allulose.
Cinnamon: Of course, you need cinnamon! Any powdered cinnamon will do.
Almond milk: To get the right consistency for the icing, you need to add a tiny bit of almond milk (or another low-carb milk of choice).
How to Make
STEP 1: Pre-heat oven or air fryer to 350 degrees F. In a food processor, pulse cottage cheese until smooth.
STEP 2: Evenly spread 1.5 tablespoons of blended cottage cheese over each tortilla. Next, evenly sprinkle a tablespoon of brown sweetener and a half teaspoon of cinnamon over the cottage cheese in each of the tortillas.



STEP 3: Roll the tortillas and place on a pan or piece of tinfoil (note that middle sometimes oozes out). Bake in the oven for 10 minutes OR 5 to 7 minutes in an air fryer.
STEP 4: While the tortillas bake, make the icing. In a small bowl, whisk 2 tablespoons of blended cottage cheese with powdered sweetener and almond milk until well combined.


STEP 5: When done baking, remove tortilla rolls from oven or air fryer. Plate and cut into 1 inch pieces and drizzle with icing. Serve immediately.
