This fudgy microwave keto brownie is made with low-carb Oreo-style cookies and a few simple ingredients for a rich, gooey treat in minutes!

Image of fudgy microwave brownie in a small bowl and topped with ice cream

My sons made the viral full-sugar Oreo microwave brownie and it was a total hit. So, of course, we had to make a copycat keto version!

It’s similar in spirit, but made with low-carb Oreo-style cookies, keto-friendly ingredients, and just a touch more sweetness. And this copycat recipe turns out just as rich, gooey, and full of sweet chocolatey flavor!

Not only that, it’s incredibly easy to make. With just a handful of ingredients, one mug or small bowl, and a quick minute in the microwave, you’ve got the best warm, gooey keto brownie you can make.

It’s the ideal snack or dessert when you're craving chocolate and want something now. Even better, top it with a scoop of keto ice cream or a swirl of sugar-free whipped cream for a seriously decadent treat!

    Ingredients

Keto-Friendly Sandwich Cookies (Oreo Copycat): These are the base of the brownie, bringing chocolaty sweetness and substance. We recommend High Key Sugar-Free Sandwich Cookies or Catalina Crunch Chocolate Vanilla Sandwich Cookies for a keto-friendly Oreo-style cookie.

Heavy cream: Adds richness and fat to make the brownie fudgy instead of dry or cakey.

Almond milk: Thins out the batter just enough so it cooks evenly without becoming too dense.

Alternative sweetener: To get the right sweetness, we add a little granular monk fruit sweetener. Other sugar-free options include erythritol, allulose, stevia, etc. Just be sure to checker out this sweetener conversion chart.

Baking powder: Helps the brownie rise slightly and keeps it soft.

    How to Make

STEP 1: Crush low-carb Oreos in a plastic bag or place them in a small bowl or mug and smash them with a fork until they're broken into small crumbs.

STEP 2: Pour in the heavy cream and almond milk. Stir until the cookies are evenly moistened and form a thick batter.

STEP 3: Add the baking powder and sweetener and stir well to make sure it’s fully mixed in.

STEP 4: Microwave the brownie on high for 1 minute to 1 minute 15 seconds, until the top looks set but the center is still slightly moist. (Microwave times can vary, so start with 1 minute and add a few extra seconds if needed.)

STEP 5: Let it cool for a minute, then dig in! Top with sugar-free whipped cream, keto ice cream, or a sprinkle of sugar-free chocolate chips if you like.

    Keto Oreo-Style Cookie Options

Our two favorite, store-bought keto Oreo-style cookies are High Key Sugar-Free Sandwich Cookies and Catalina Crunch Chocolate Vanilla Sandwich Cookies. Though they're somewhat similar in taste to Oreos, both are crumbly, not as crisp and crunchy as Oreos, and are expensive.

If you don't mind something a little higher in carbs and sugar, then you'll likely enjoy Rip Van LEOs Cookies and Cream Sandwich Cookies, which are the best in terms of flavor and texture (in our humble opinion).
